Jude’s Chicken Italienne Recipe

Method

  1. Preheat oven to 180C.
  2. Place flour in a bowl, add drumsticks and toss to coat.
  3. Place 2 tablespoons olive oil in a large frypan and set over high heat. Add the drumsticks and cook, turning, until golden brown, about 10 minutes. Transfer to a casserole dish and set aside, keeping warm.
  4. Add the onion and garlic to the frypan and cook until translucent. Add tomato soup, sherry, parsley and remaining tablespoon oil and allow to simmer for about 5 minutes. Transfer mixture to the casserole dish with the drumsticks and place in the oven to cook for about 1 hour.
  5. Serve drumsticks with buttered risoni or orzo pasta, garnish with parsley and season with salt and pepper.
