Method
- Preheat oven to 180C.
- Place flour in a bowl, add drumsticks and toss to coat.
- Place 2 tablespoons olive oil in a large frypan and set over high heat. Add the drumsticks and cook, turning, until golden brown, about 10 minutes. Transfer to a casserole dish and set aside, keeping warm.
- Add the onion and garlic to the frypan and cook until translucent. Add tomato soup, sherry, parsley and remaining tablespoon oil and allow to simmer for about 5 minutes. Transfer mixture to the casserole dish with the drumsticks and place in the oven to cook for about 1 hour.
- Serve drumsticks with buttered risoni or orzo pasta, garnish with parsley and season with salt and pepper.
